The tradition of drinking chicory beveragesIn Europe, the practice of roasting and preparing beverages with chicory root began as early as the 16th century. The brew made from roasted cereals and chicory was strongly believed to have a positive effect on human health. Today, the tradition of drinking such beverages is still alive. However, they can now be consumed in the form of a soluble powder.
In the production process of soluble cereal beverages (from barley, rye) gluten does not enter the finished product, due to the so-called extraction process.During this process water penetrates the roasted ingredients (roasted cereals) producing a liquid essence which is later subjected to a drying process. The result of this process is a soluble powder or granules.Gluten is not soluble in water, and is therefore not extracted and does not enter the finished product but is disposed of along with the rest of the post extraction waste. Grana gluten free products are regularly tested by an accredited laboratory. All products labelled ‘gluten-free’ comply with the standards for gluten-free foodstuffs established and enforced by the European Union and the World Health Organization, i.e.: in the case of processed products the permissible gluten level for a product to be labelled ‘gluten-free’ is less than 20mg/kg.
